  • 1 lb Brussels sprouts halved and trimmed
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • For Soy-Ginger Glaze:
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp fresh ginger grated
  • 1 garlic clove minced
  • Optional: 1 tsp cornstarch for thicker glaze

Method
 

  1. Preheat Oven
  2. Preheat your oven to 400°F (200°C).
  3. Prepare Brussels Sprouts
  4. In a large bowl, toss halved Brussels sprouts with olive oil, salt, and pepper. Spread them evenly on a baking sheet, cut side down for optimal crisping.
  5. Roast
  6. Roast for 20–25 minutes, flipping halfway through, until they're golden brown and crispy on the edges.
  7. Make the Glaze
  8. While sprouts are roasting, add soy sauce, honey (or maple syrup), rice vinegar, sesame oil, grated ginger, and minced garlic to a saucepan. Simmer on medium heat for 3–4 minutes until slightly reduced. If you prefer a thicker glaze, mix 1 tsp cornstarch with 2 tsp water and stir it into the simmering glaze.
  9. Toss & Serve
  10. Once Brussels sprouts are done, transfer them to a bowl. Pour the glaze over and toss until evenly coated. Let rest for 5 minutes to absorb the flavors. Serve hot.
